Prepare the Duck

Slice and Marinate

Pat the duck breast or thigh dry and slice thinly across the grain into bite-sized strips. In a bowl, combine the sliced duck with 1 tablespoon light soy, 1 tablespoon shaoxing wine, 1 teaspoon cornstarch and (optional) 1 egg white. Toss to coat and let marinate 10–15 minutes while you prepare other ingredients.

Velvet and Sear (optional)

If you prefer a tender, slightly seared duck, heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Remove excess marinade, then sear duck quickly in batches 30–60 seconds per side until just cooked through and slightly browned. Transfer to a plate and keep warm. Alternatively, you can add the raw marinated duck directly to the simmering soup (see Soup Assembly).

Make the Soup Base

In a large pot, combine 6 cups duck or chicken stock and 2 cups water. Add smashed garlic cloves and 2 tablespoons sliced fresh ginger. Bring to a gentle simmer over medium heat.

Stir in 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon Chinese five-spice powder, 1 tablespoon brown sugar, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Taste and adjust seasoning: add more soy for saltiness, more vinegar for brightness, or a pinch more sugar to balance.

Simmer the broth gently, uncovered, for 12–15 minutes to allow flavors to meld. Skim any foam or impurities from the surface.

Stir in 1 teaspoon sesame oil at the end of simmering, then remove and discard the smashed garlic pieces. Keep the pot at a low simmer while you cook noodles and vegetables.

Cook Noodles & Vegetables

Bring a separate pot of water to a boil and cook 12 oz fresh wheat or rice noodles according to package directions until just al dente. Drain, rinse briefly under warm water to prevent sticking, and portion into serving bowls.

Blanch 2 cups halved bok choy and 1 cup julienned carrot in the noodle pot for 30–45 seconds until bright and slightly tender. Remove and arrange with noodles in bowls. Add 1 cup bean sprouts and set aside.

Assemble Soup

With the broth simmering, add 1 cup sliced shiitake mushrooms and 1 cup julienned bamboo shoots to the pot and cook 2–3 minutes to heat through and infuse flavor.

If you did not sear the duck earlier, add the marinated raw duck to the simmering broth now and cook 2–4 minutes until just cooked through (time depends on thickness). If you pre-seared the duck, add it to the broth only to reheat for 30–60 seconds.

Taste the broth once more and adjust seasoning as needed. Remove the ginger slices if large pieces remain.

Ladle the hot broth, with duck, mushrooms, and bamboo shoots, over the prepared bowls of noodles and vegetables so each bowl receives an even portion of solids and liquid.

Garnish and Serve

Top each bowl with a sprinkle of cilantro (about 1 tablespoon per bowl), some thinly sliced scallion greens, and a few teaspoons of chili oil or sliced fresh chiles to taste.

Serve immediately with lime wedges on the side for squeezing over the soup. Offer extra soy, chili oil, and sesame oil at the table.
