Method
Preparing the Cake
Melt Chocolate and Butter
Preheat your oven to 425°F (220°C). In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until both are completely melted and smooth.
Mix in Sugar and Eggs
Add the granulated sugar to the melted chocolate mixture and stir until well combined. Then, add the large eggs and large egg yolks one at a time, mixing thoroughly after each addition.
Incorporate Flour and Flavorings
Gently fold in the all-purpose flour, vanilla extract, and a pinch of salt until just combined. Be careful not to overmix the batter.
Fill Ramekins
Evenly distribute the batter among the prepared ramekins, filling each about 3/4 full.
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.
Serving the Cake
Cool Slightly
Remove the ramekins from the oven and let them cool for about 1 minute. Carefully run a knife around the edges to loosen the cakes.
Add Ice Cream and Garnish
Top each lava cake with a scoop of vanilla ice cream. Dust with powdered sugar and garnish with mint leaves if desired.
Serve Immediately
Serve the chocolate lava cakes warm, allowing the molten center to flow out as you dig in with a spoon.
