In a large mash tun, combine the pale malt and corn grains with 12 liters of water. Heat the mixture to 65°C (149°F) and maintain this temperature for 60 minutes to allow the enzymes to convert the starches into sugars.

Mashing

After mashing, sparge the grains with hot water (around 75°C or 167°F) to extract the sugars. Collect the wort in the brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add the bittering hops and boil for 60 minutes. Add aroma hops in the last 5 minutes of the boil.

Boiling

After the boil, cool the wort quickly to around 20°C (68°F) using a wort chiller or an ice bath.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel with an airlock. Ferment at 12°C (54°F) for 2-3 weeks.

Fermentation

Once fermentation is complete, carbonate the beer by adding priming sugar. Fill sanitized bottles with the beer, cap them, and allow them to carbonate for 1-2 weeks.
