Method

Braised Pig Tails

Prepare the Braise

In a large pot, combine pig tails, black tea, soy sauce, ginger, garlic, onion, and water. Bring to a boil.

Simmer

Reduce heat to low, cover, and simmer for 2-3 hours until the pig tails are tender.

Cool and Strain

Remove from heat and let cool. Strain the liquid and reserve for later use.

Summer Squash Doro Wat

Cook the Squash

In a skillet, heat oil over medium heat. Add onion and sauté until translucent. Stir in summer squash, berbere spice, tomato, and salt. Cook until squash is tender.

Dragee Peanuts

Prepare Dragee Peanuts

In a bowl, mix roasted peanuts with sugar and salt. Spread on a baking tray and bake at 350°F for 10 minutes.

Smoked Egg Emulsion

Make the Emulsion

In a blender, combine egg yolks, smoked paprika, lemon juice, and slowly add olive oil until the mixture is emulsified.

Sour Aji Peppers

Prepare Peppers

In a jar, combine aji peppers, vinegar, and salt. Let sit for at least 24 hours before using.

Glutinous Rice

Cook Rice

Rinse glutinous rice and soak for 1 hour. Drain and cook with water in a rice cooker or pot until tender.
