Method
Burger
Form patty
Divide and shape the ground beef into one 8 oz (0.5 lb) patty about 3/4" to 1" thick, creating a slight dimple in the center with your thumb to prevent doming during cooking.
Season
Season both sides of the formed patty evenly with 1/2 teaspoon salt and 1/4 teaspoon black pepper just before cooking.
Cook patty
Heat a skillet or griddle over medium-high heat until hot. Add 1 tablespoon unsalted butter and let it melt and foam. Place the patty in the pan and cook for 3 1/2 to 4 minutes on the first side without moving to develop a crust. Flip and cook the second side for 3 to 3 1/2 minutes for medium doneness (adjust 1-2 minutes for rarer or more well-done).
Bun & Condiments
Prep bun
Split the brioche bun. Lightly toast cut sides in a separate dry skillet or under a broiler for 30-60 seconds until golden and slightly crisp.
Assemble condiments
Mix 1 tablespoon mayonnaise, 1 teaspoon ketchup, and 1/2 teaspoon mustard together and spread evenly on the bottom half of the toasted bun.
Produce
Assemble burger
On the bottom bun (with condiments), place the lettuce leaf first to act as a moisture barrier, then set the cheese-covered patty on top. Add tomato slice(s) and onion rings. Spread a thin layer of mayonnaise on the top bun (optional) and place it on the burger. Serve immediately.
