Trim excess fat from chicken pieces and lightly score skin in a few places so brine and heat can penetrate.
In a large bowl or gallon zipper bag, combine buttermilk, hot sauce (if using), kosher salt, sugar and garlic powder. Stir to dissolve salt and sugar.
Add chicken to the brine, ensuring pieces are fully submerged. Cover or seal and refrigerate for at least 4 hours, preferably overnight (up to 24 hours) for best flavor and tenderness.
Breading / Fry Batter
About 30–45 minutes before frying, remove chicken from refrigerator so it comes closer to room temperature (keeps oil temperature steadier).
Dry Mix
In a shallow dish or bowl whisk together flour, cornstarch, paprika, salt, black pepper, garlic powder, onion powder and the 1 tsp cayenne. This creates a crisp, lightly spiced crust.
Wet Mix
In another bowl whisk eggs and milk until combined. Optionally add 1–2 tablespoons of the reserved buttermilk for extra tenderness.
Remove chicken from brine, letting excess drip off. Pat lightly with paper towel — you want some moisture so batter adheres but not an excess drip.
Dredge each piece first in the dry mix, then into the egg wash, then back into the dry mix pressing firmly to form a good crust. For an extra-thick crust, repeat the wet and dry step one more time. Place breaded pieces on a rack for 10–15 minutes to set the crust.
Frying
Pour frying oil into a large, heavy pot or Dutch oven to a depth of about 3 inches (approximately 5–6 cups; adjust pan size). Heat oil over medium-high until it reaches 350°F (175°C). Use a thermometer for accuracy.
Working in batches (don’t overcrowd), carefully lower breaded chicken into the hot oil skin-side down. Maintain oil temperature between 325–350°F (163–175°C). Fry bone-in thighs 12–15 minutes, turning once halfway through if needed, until crust is deep golden brown and internal temperature reaches 165°F (74°C).
Use a slotted spoon or spider to remove chicken and transfer to a wire rack set over a sheet pan to drain. Let rest 5 minutes before saucing to keep crust crisp.
Hot Oil Sauce (Nashville Oil)
While chicken fries (or right after first batch removes), make the hot oil: in a small saucepan combine 1/2 cup neutral oil and 2 tablespoons butter. Warm over low heat until butter melts and the mixture is shimmering but not smoking.
Whisk in 2 tablespoons cayenne (start with 1 tbsp if you prefer less heat), brown sugar, 1 teaspoon paprika, 1/2 teaspoon garlic powder, smoked paprika (if using), and 1/2 teaspoon salt. Heat gently for 1 minute to bloom the spices — do not fry the spices or let oil smoke.
Sandwich Assembly & Garnish
Spread about 1 to 1 1/2 tablespoons mayonnaise on the bottom bun (adjust to taste).
Place a handful of shredded iceberg lettuce on the mayo, then add two or three pickle slices (or arrange to your preference).
Set a piece of sauced Nashville hot chicken on the pickles. For saucier sandwiches, spoon a little extra hot oil on the chicken after placing it on the bun (watch for dripping).
Top with the toasted bun, press lightly and serve immediately while hot and crispy.
Optional: serve extra hot oil and pickles on the side, and provide napkins—this sandwich is messy and spicy.
