Onion mixture

    Prepare onions

    Peel and thinly slice the onions into 1/8–1/4 inch (3–6 mm) rings or half-rings. Separate into individual rings and place them in a large mixing bowl.

    Toss the sliced onions with 1 teaspoon of the salt and let sit for 5–10 minutes. This draws out a little moisture and helps the spices adhere.

    Add gram flour, rice flour, carom seeds, red chili powder, turmeric, garam masala, ground cumin, remaining 1/4 teaspoon salt, chopped cilantro and chopped green chili (if using) to the bowl with onions. Mix thoroughly so the flour and spices coat the onion slices evenly.

    Add about 1/4 cup water gradually and mix until the mixture holds together when pressed but is not runny. You want a thick, slightly sticky batter that clings to the onion pieces. If mixture seems too dry, add up to 1–2 tablespoons more water; if too wet, add 1 tablespoon more gram flour.

For coating & frying

    Heat oil in a heavy-bottomed saucepan or deep skillet to 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of batter into oil — it should sizzle and come up steadily without browning immediately.

    If desired, lightly dust the onion-batter clusters with 1–2 teaspoons of extra chickpea flour to absorb excess surface moisture and help crisping.

    Using a tablespoon or your fingers, pick up small portions (about 1½–2 tablespoons) of the onion-batter and carefully drop into the hot oil. Do not overcrowd — fry in batches of 6–8 depending on pan size so oil temperature recovers.

    Fry, turning occasionally, until golden brown and crisp, about 3–5 minutes per batch. Adjust heat as necessary to maintain an even sizzle; lower slightly if browning too fast.

    Use a slotted spoon to transfer pakoras to a paper towel–lined plate to drain. Sprinkle with a pinch of salt while still hot for extra seasoning. Keep finished pakoras in a warm oven (200°F/95°C) on a tray if frying multiple batches.

To serve

    Serve onion pakoras hot with mint chutney or tamarind chutney and lemon wedges on the side.
