Prep cauliflower
Wash the cauliflower and remove outer leaves. Cut into bite-sized florets, keeping them fairly uniform (about 1 to 1½ inches). Pat dry thoroughly—moist florets will make the batter soggy.

Bring a large pot of salted water to a boil. Blanch the florets for 2 minutes to slightly soften and remove rawness, then drain and plunge into ice water to stop cooking. Drain completely and pat dry on kitchen towels.

Make batter
In a large bowl, whisk together besan, rice flour, turmeric, red chili powder, and salt. Add about 1 cup water gradually and whisk to a smooth, thick but coating batter — it should cling to the florets (adjust water slightly if needed). Batter should be lump-free and the consistency of heavy cream.

Fry cauliflower
Working in batches to avoid crowding, dip each cauliflower floret into the batter allowing excess to drip off, then carefully lower into hot oil. Fry until golden brown and crisp, about 4–5 minutes per batch. Use a slotted spoon to transfer fried florets to a plate lined with paper towels to drain. Maintain oil temperature between batches; adjust heat as needed.

Add curry leaves and slit green chilies; sauté for 20–30 seconds until aromatic and curry leaves become crisp. Be careful — curry leaves can sputter.

Stir in chopped ginger and minced garlic and sauté for 30–45 seconds until raw smell goes away.

Add sliced onion and sauté on medium heat until translucent and beginning to brown at the edges, about 4–6 minutes.

Add chopped tomato, coriander powder, cumin powder, and a pinch of salt. Cook until the tomato softens and oil starts to separate from the masala, about 3–4 minutes.

Reduce heat to low, then add the fried cauliflower florets to the pan. Gently toss to coat the florets with the masala and curry leaves, taking care not to break the crust. Cook together for 2–3 minutes so flavors meld.

Sprinkle garam masala and amchur powder (or squeeze lemon juice) over the cauliflower. Taste and adjust salt. Toss once more to combine. If you prefer slightly saucier coating, add 1–2 tablespoons of water and toss for another minute.
