Prepare the Lychee

Peel and pit the lychee fruit. If using canned lychee, drain and rinse before use.

Mix the Filling

In a medium bowl, combine the prepared lychee, lime juice, and orgeat syrup. Toss gently to coat the lychee evenly. Set aside to let the flavors meld.

Preheat the Oven

Preheat your oven to 350°F (175°C).

Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, salt, and ground cinnamon until well combined.

Add Wet Ingredients

Melt the unsalted butter and let it cool slightly. Add the melted butter, milk, and Seedlip Spice to the dry ingredients. Stir until just combined; do not overmix. The batter will be thick.

Assembly and Baking

Combine Layers

In a greased 9x9-inch baking dish, pour the lychee filling evenly across the bottom. Spoon the batter over the lychee filling, spreading it evenly.

Bake the Cobbler

Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean.

Remove from the oven and let cool slightly. Serve warm, optionally with a scoop of vanilla ice cream for added indulgence.
