Marinated Shrimp

Marinated Shrimp

    Prepare shrimp and marinade

    Pat the shrimp dry with paper towels. In a medium bowl, whisk together 1.5 tbs olive oil, 1 tbs lemon juice, 1 tsp minced garlic, 0.5 tsp smoked paprika, 0.25 tsp ground cumin, 0.25 tsp red pepper flakes, 0.5 tsp salt and 0.25 tsp freshly ground black pepper until combined.

    Marinate

    Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for 15–30 minutes (no longer than 45 minutes) to let flavors develop.

    Heat pan

    Heat a large nonstick or stainless-steel skillet over medium-high heat until hot. Add 1 tsp olive oil if the pan is not well-seasoned.

    Sear shrimp

    Remove shrimp from the marinade, letting excess drip off. Arrange shrimp in a single layer in the hot skillet (work in batches if needed). Cook without moving for 1.5–2 minutes, until the underside is pink and slightly golden. Flip and cook another 1–1.5 minutes until opaque and just cooked through (internal temperature ~120–125°F/49–52°C). Total cook time per batch ~3 minutes depending on shrimp size.

    Finish with herbs and lemon

    Remove shrimp to a plate. Immediately sprinkle chopped cilantro over the shrimp and squeeze a little lemon over them. Taste and sprinkle flaky sea salt if desired.

    Serve

    Serve warm as an add-on to a quinoa bowl: place shrimp atop quinoa and any bowl components, garnish with microgreens or chopped scallion and lemon wedges on the side.
