Prepare Oysters & Garnish

Shuck oysters
Keep oysters cold on crushed ice or in the refrigerator until ready to shuck. Using a clean oyster knife and a towel to hold the oyster, insert the knife at the hinge, twist to pop it open, then run the blade along the top shell to release the muscle. Remove top shell, being careful to retain the liquor in the bottom shell. Trim any ragged edges of muscle so oysters sit flat.

Place shucked oysters on a tray lined with crushed ice or a bed of rock salt so they sit level. If using immediately, keep refrigerated until plating.

Lightly season each oyster with a tiny pinch of fine sea salt (about 1/16 tsp per oyster).
Make Rosé Mignonette

In a small bowl, combine 2 tablespoons finely minced shallot, 2 tablespoons champagne vinegar, 1/4 cup dry rosé wine, 1/2 teaspoon caster sugar, 1/4 teaspoon fine sea salt and 1/2 teaspoon freshly ground black pepper.

Whisk thoroughly until sugar dissolves. Taste and adjust acidity or salt — the mignonette should be bright and slightly tart to cut through the oyster richness. Refrigerate for at least 15 minutes so flavors meld. Can be made up to 24 hours ahead; bring to chilled temperature before using.
Prepare Crème Fraîche & Apple

In a small bowl, gently fold 1 cup crème fraîche with 1/2 cup very finely diced apple and 1/2 teaspoon fine sea salt until evenly combined. The apple should be cut so small it provides a delicate crunch and a hint of sweetness without overpowering. If desired, add 1 teaspoon lemon juice to keep apple bright (optional). Chill briefly while plating.
Assemble & Finish

Spoon a small dollop (about 1/2 teaspoon) of the apple crème fraîche onto each oyster, placing it slightly to one side so the oyster liquor remains visible. Do not drown the oyster — the garnish should complement, not mask, the shellfish.

Top each oyster with a scant one-quarter teaspoon (approximately a small mound) of caviar. Use a mother-of-pearl spoon or non-metal utensil if possible to avoid affecting caviar flavor.

Drizzle a few drops (about 1/8 teaspoon) of rosé mignonette over each oyster, aiming for balance: enough to add acidity and shallot aroma but not so much that the crème fraîche dissolves.
