Pickled Vegetables & Prep

    Quick pickle vegetables

    In a small bowl combine rice vinegar, sugar and 0.25 tsp salt. Stir until sugar dissolves. Add thinly sliced cucumber, shredded carrot and radish (if using). Toss to coat, let sit at room temperature while you finish other prep (at least 10 minutes; can be refrigerated up to 2 hours).

Make Lobster Filling

    Chop and taste lobster

    If your lobster meat is in large chunks, roughly chop to bite-size pieces (about 1/2-inch). Place in a medium mixing bowl and taste a small piece to judge saltiness — reduce added salt if lobster is already salty.

    Mix dressing

    In a small bowl whisk together 3 tbs mayonnaise, optional 1 tbs light mayo or sour cream (if you want a looser texture), 1 tbs fresh lime juice, 1 tsp sesame oil, 1 tsp toasted sesame seeds, 1 tsp salt (adjust after mixing), 1/2 tsp freshly ground black pepper and 1 tsp chili oil or sriracha if using. Taste and adjust seasoning: add more lime for brightness, more mayo for creaminess, or a pinch more salt as needed.

    Combine filling

    Pour the dressing over the chopped lobster. Add 2 tbs finely chopped scallions, 1 tbs chopped cilantro (optional) and 1 tsp minced chives. Gently fold until lobster is evenly coated. Cover and refrigerate for 10–15 minutes to let flavors meld.

Reheat/Steam Bao Buns

    Bring 1–2 inches of water to a simmer in a wok or saucepan with a steamer basket. Place bao buns on parchment or cabbage leaves to prevent sticking and steam, uncovered, for 6–8 minutes if thawed (follow package timing if different). Remove with tongs and keep covered with a clean towel to stay warm.

    Pan-steam method (if no steamer)

    Heat a large nonstick skillet over medium. Add 2 tbsp neutral oil and place buns folded-side down; brown 30–60 seconds to get a little char, then add 1/4 cup water and immediately cover. Steam in pan for 4–6 minutes until heated through. Remove lid and allow any excess moisture to evaporate briefly.

Assemble Bao

    Spread sauces

    Open each warm bao. Spread about 1/2 teaspoon hoisin sauce on the base and 1 teaspoon spicy mayo (or drizzle as preferred). This builds sweet and spicy layers beneath the lobster.

    Add lobster

    Spoon about 2 tablespoons of the lobster filling into each bun (this recipe yields about 8 buns; adjust to preference). Ensure lobster pieces are large enough to give texture but small enough to bite easily.

    Add pickles & crunch

    Top lobster with a small pinch (~1 tablespoon) of the quick-pickled cucumber/carrot mixture and 1 teaspoon pickled jalapeño if using. Add a scattering (about 1/2 teaspoon) of crispy fried shallots or garlic chips for crunch.

    Finish with microgreens or a cilantro sprig and a squeeze of lime. Serve immediately while bao are warm. Provide extra hoisin, spicy mayo and lime wedges on the side.
