Chill the bottles

Place Vietti white bottles (Arneis, Roero Arneis, Favorita) in the refrigerator for at least 2 hours prior to serving. If short on time, submerge bottles in an ice bucket with 4 cups of ice and enough water to cover for 20–30 minutes until well chilled (approx. 45–50°F / 7–10°C).

Prepare palate cleansers and accompaniments

Arrange plain crackers or baguette slices on a small platter. Thinly slice pear or green apple and arrange next to a 6 oz portion of mild cheese (cut into small wedges). Place roasted hazelnuts in a small bowl. Set a glass pitcher with filtered water and clean small water glasses for palate cleansing between wines.

Pouring and tasting order

Open the bottles just before serving and wipe the necks. Pour 2–3 ounces (approx. 1/4 cup) of each Vietti white into separate tasting glasses. If providing three wines, serve in this order: 1) Vietti Arneis (fresh, floral), 2) Vietti Roero Arneis (slightly more structure), 3) Vietti Favorita (if included, often a bit more texture/mineral). Lighter, more delicate wines should be tasted first, then move to the fuller/older or more textured ones.

Tasting protocol

Encourage tasters to look at the wine (clarity, color), swirl gently to release aromatics, inhale for primary aromas (pear, white flowers, citrus, almond), then take a small sip, let it coat the mouth, and note acidity, body, and finish. Between wines, cleanse the palate with a small sip of water and a plain cracker or a small bite of mild cheese and pear.

Offer guidance: Vietti Arneis pairs well with light seafood, salads, and mild cheeses; Roero Arneis can handle richer fish or vegetable dishes; Favorita pairs nicely with Mediterranean appetizers. Storage after opening

If bottles are not finished, reseal with a wine stopper and refrigerate. Consume within 3–5 days for best freshness (Arneis and similar whites are best within a few days).
