Prepare Fruit

    Wash and dry

    Rinse strawberries, blueberries, grapes, and mint under cold running water. Gently pat dry with a clean kitchen towel or paper towels to remove excess moisture so the fruit doesn't become watery.

    Hull and slice strawberries

    Remove green tops from strawberries and slice into halves or quarters depending on size so that pieces are roughly bite-sized (about 1/2 to 3/4 inch).

    Prepare larger fruit

    Peel and core pineapple and cut into 1/2-inch dice. Peel and dice the mango into 1/2-inch pieces. Peel and slice the kiwi into 1/4-inch rounds or half-moons. If grapes are large, halve them. Segment or peel the orange and cut into bite-sized pieces, removing pith and any seeds.

    Combine

    Place all prepared fruit (strawberries, blueberries, pineapple, kiwi, grapes, mango, orange) into a large mixing bowl. Gently toss with a large spoon to combine evenly, taking care not to crush softer fruits.

Make Dressing & Finish

    In a small bowl or measuring cup, whisk together the fresh lime juice and honey (or maple syrup) until the honey dissolves. Add the orange zest and a pinch of sea salt and freshly ground black pepper if using. Taste and adjust acidity or sweetness: add another 1/2 tablespoon honey if you prefer sweeter, or another 1/2 tablespoon lime juice for brighter acidity.

    Pour the dressing over the combined fruit. Using two large spoons, gently toss the fruit so the dressing coats the pieces evenly without mashing them.

    Tuck in the torn or chiffonade mint leaves and gently fold once more to distribute the mint. Let the fruit sit for 5–10 minutes at room temperature (or chill for up to 1 hour) to let flavors marry. If chilling longer, cover the bowl and refrigerate; the fruit will release some juice, which becomes a flavorful syrup.

Serve

    Taste and adjust: if the mixture tastes flat, add a pinch more salt or a squeeze of lime. If it needs more sweetness, drizzle a little more honey and toss lightly.

    Transfer the fruit to a serving bowl or divide into 4 individual bowls. Sprinkle toasted coconut flakes and/or chopped nuts over the top if using. Serve with a dollop of Greek yogurt on the side or spooned over each portion.

    Store leftovers in an airtight container in the refrigerator for up to 2 days. Note: texture will soften over time as juices are released.
