Burger Patties

Form patties
Place the ground beef in a large bowl. Add kosher salt, freshly ground black pepper, and Worcestershire sauce. Gently combine with your hands until just mixed; avoid overworking. Divide beef into 4 even portions (about 4 oz each). Form each portion into a patty about 3/4 inch thick and slightly wider than the buns. Press a shallow dimple in the center of each patty with your thumb to prevent doming while cooking.

Cook patties
Heat a large cast-iron skillet or heavy pan over medium-high heat until hot. Add the neutral oil and spread. Place patties in the pan, leaving space between them. Cook without moving for 3 to 4 minutes, until a brown crust forms. Flip each patty and cook 2 to 3 minutes more for medium (adjust time for preferred doneness). During the last 30 seconds of cooking, place a slice of cheese on each patty and cover the pan with a lid or a large plate to melt the cheese, about 30 seconds to 1 minute.

Rest patties
Transfer cooked patties to a plate and let rest for 2 minutes while you finish buns and assemble. This helps juices redistribute.

Prep produce
Wash and dry lettuce leaves and tomato. Slice tomato into 4 even slices. Arrange dill pickle slices and set aside.

Mix condiments
In a small bowl combine mayonnaise, ketchup, and mustard. Taste and adjust proportions to preference.

Assemble burgers
Spread a tablespoon or so of the sauce on the bottom bun. Place a lettuce leaf on the sauce, then the cheeseburger patty. Top with a tomato slice, a few onion rings, and two pickle slices. Add additional sauce to the top bun if desired, then place the top bun over the burger. Repeat for remaining burgers.
