    Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper; set aside.

    Whisk together the dry ingredients: all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and fine sea salt in a large bowl.

    In a separate bowl, beat the eggs with granulated sugar and brown sugar until thick and pale. Whisk in buttermilk, vegetable oil, and vanilla extract.

    Pour the wet ingredients into the dry ingredients and mix just until combined. Carefully whisk in the boiling water until the batter is smooth and thin.

    Divide the batter evenly among the three prepared pans and smooth the tops.

    Bake for 28-34 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

    Cool the pans on a rack for 15 minutes, then turn the cakes out onto racks to finish cooling completely.

    Make the chocolate ganache for filling and frosting: Place chopped dark chocolate in a heatproof bowl. In a small saucepan, bring heavy cream to a simmer.

    Pour the hot cream over the chopped chocolate. Let stand 2-3 minutes, then whisk until smooth and glossy. If the ganache is too thick, warm gently and whisk in a spoonful of cream until pourable.

    Divide the ganache into two portions: one for filling between the layers, and one for coating the exterior of the cake.

    Level the three cooled cake layers with a knife or cake leveler if needed.

    Place the first layer on a cake board. Spread a generous, even layer of ganache on top for the filling. Stack the second layer and repeat with more ganache.

    Place the final layer on top. Apply a thin crumb coat of ganache over the entire cake and refrigerate 15-20 minutes to set.

    Apply a final, smooth coat of ganache over the cake. Let the ganache set at room temperature or refrigerate briefly until glossy and firm.

    Chill the cake for 30-60 minutes to set before slicing and serving.
