Pat salmon fillets dry with paper towels. Season both sides and the skin lightly with kosher salt and freshly ground black pepper (about 1/2 tsp salt per side total). Let sit at room temperature for 10–15 minutes while you prepare the chosen sauce.

Heat a large nonstick or stainless-steel skillet over medium-high heat until hot. Add 2 tbs neutral oil and swirl to coat.

Place salmon fillets skin-side down in the pan (do not overcrowd; cook in two batches if necessary). Press each fillet gently with a spatula for 10 seconds to ensure full skin contact.

Cook skin-side down without moving for 4–6 minutes, depending on thickness, until the skin is crisp and the flesh is cooked about two-thirds of the way up the side.

Flip the fillets and cook 30–90 seconds more for medium-rare to medium doneness (internal temp 120–125°F / 49–52°C for medium-rare; 125–135°F / 52–57°C for medium). Remove salmon to a warm plate and tent loosely with foil while you finish the sauce and glaze.

Citrus Chili Glaze (choose if guest selects this option)

In a small saucepan, combine 1 cup orange juice, 2 tbs lime juice, 3 tbs honey, 1 tbs rice vinegar, 1 tsp red chili flakes and 1 tbs soy sauce. Whisk to combine.

Bring mixture to a gentle boil over medium heat, then reduce to medium-low and simmer, stirring occasionally, until reduced by about half and slightly syrupy (6–8 minutes).

Remove from heat and whisk in 1 tbs butter until glossy. Taste and adjust sweetness, acidity, or heat as desired (add a pinch more salt or a dash more lime).

Spoon or brush glaze over seared salmon just before serving (about 1–2 tbs glaze per fillet).

Lemon Garlic Cream (choose if guest selects this option)

In a small skillet over medium heat, melt 2 tbs unsalted butter. Add 3 minced garlic cloves and cook, stirring, until fragrant and lightly golden, about 30–45 seconds—do not brown.

Pour in 3 tbs heavy cream and bring to a gentle simmer. Stir in 1 tsp lemon zest, 1 tbs lemon juice and 2 tbs grated Parmesan. Simmer 1–2 minutes until sauce thickens slightly.

Season with 1 tsp salt and 1/2 tsp freshly ground black pepper, then stir in chopped parsley if using. Remove from heat.

Spoon the warm lemon garlic cream over the plated salmon (about 1–2 tbs per fillet).

Aleppo Honey (choose if guest selects this option)

In a small bowl, whisk together 3 tbs honey, 1 tsp Aleppo pepper, 1 tsp apple cider vinegar, 1 tsp finishing olive oil, and 1/4 tsp sea salt until smooth and slightly runny.

Taste and adjust heat (more Aleppo) or tang (more vinegar) to preference.

Drizzle approximately 1 tbs of the aleppo honey mixture over each seared salmon fillet just before serving; reserve a little on the side for guests who want more.

To Serve

Place one salmon fillet on each plate. Add chosen sauce (citrus chili glaze, lemon garlic cream, or aleppo honey) as instructed above.

Garnish with a lemon wedge and a sprinkle of chopped fresh herbs. Serve immediately.
