Prep

Pat salmon fillets dry with paper towels. Season both sides with kosher salt and freshly ground black pepper. Let sit 5–10 minutes at room temperature while other components are prepared.

Dredge

Place the all-purpose flour and lemon zest on a shallow plate and mix. Lightly dredge each seasoned fillet in the flour mixture, shaking off excess. The lemon zest in the coating adds aroma without making a thick crust.

Sear

In a large skillet (preferably stainless steel or cast iron) over medium-high heat, add 1 tbs butter and 1 tbs olive oil. When the fat is shimmering but not smoking, add two fillets skin-side down (if skinless, place presentation-side down). Cook undisturbed 3–4 minutes until a golden crust forms. Flip and cook 1.5–2 minutes for medium doneness (internal temp about 125–130°F / 52–54°C). Transfer cooked fillets to a warm plate and tent loosely with foil. Repeat with remaining 1 tbs butter and 1 tbs olive oil and the remaining fillets.

Deglaze

Keep the skillet over medium heat. Add the white wine (or stock) to the hot pan to deglaze, scraping up browned bits with a wooden spoon. Let the liquid reduce by about half, 2–3 minutes.

Build sauce

Add the fresh lemon juice, rinsed capers, and the optional 1/4 cup chicken stock if you want a bit more volume. Let the mixture simmer gently 1–2 minutes to marry flavors. If using heavy cream for a slightly silkier sauce, stir it in now and simmer 30–45 seconds.

Mount

Reduce heat to low. Whisk in the 2 tbs of cold butter, one piece at a time, allowing each to melt and emulsify into the sauce to create a glossy finish. Taste and adjust seasoning — add a pinch of salt only if needed (capers and wine add saltiness) and a grind of black pepper.

Finish & Serve

Return the cooked salmon to the skillet for 30–60 seconds to warm and coat lightly with the sauce (do not overcook). Spoon sauce and capers over each fillet. Sprinkle chopped parsley over the salmon and garnish with lemon slices or wedges. Serve immediately with your choice of sides (risotto, mashed potatoes, or steamed vegetables work well).
