Build the cocktail
Fill a copper mug or highball glass with ice (about 1 cup). Pour in 2 oz Jim Beam Peach bourbon, 1 oz peach purée, and 0.5 oz fresh lime juice. If your purée is very tart or you prefer a sweeter drink, add 0.25 oz simple syrup.
Top and stir
Top the mixture with 4 oz chilled ginger beer. Gently stir once or twice with a bar spoon to combine the ingredients without flattening the ginger beer's carbonation.
Garnish & serve
Garnish with a slice of fresh peach and a lime wheel or wedge on the rim. Add a mint sprig for aroma if desired. Serve immediately with a straw.
