Prepare water

Bring 4 liters (approximately 16 cups) of water to a rolling boil in a large pot. Add 1 tablespoon kosher salt once boiling.

Staggered cooking

If using two dry shapes with differing cook times (for example, spaghetti and penne), start the variety with the longer cook time first. For fresh tortellini, hold until later in the schedule to avoid overcooking. Aim for each pasta to finish al dente: penne 10–12 minutes, rigatoni 11–13 minutes, spaghetti 9–11 minutes, fettuccine 8–11 minutes (dry), cheese tortellini 3–5 minutes (fresh). Check the package for exact times.

Add the first pasta to the boiling water and stir to prevent sticking. When there are 2 minutes left on the package time for that pasta, add the second pasta (if both are dry) so they finish close together. If using fresh tortellini, add it during the final 3–5 minutes only.

Reserve 1 to 1 1/2 cups of pasta cooking water just before draining — this starchy water will loosen sauces and help them cling to the pasta.

Drain pasta in a colander and give a quick shake. Do not rinse unless preparing a cold pasta salad. Transfer drained pasta back to the pot or to a large warm bowl for saucing.

Sauce preparation & combining (for two chosen sauces)

Heat sauces

Warm the selected sauces in separate saucepans over low–medium heat. Marinara: simmer gently until steaming (5–8 minutes). Alfredo: warm on low and stir frequently to prevent separation (5–7 minutes). Pesto: loosen with 1–2 tablespoons olive oil or reserved pasta water and stir to a saucy consistency.

If using the olive oil & garlic option: heat 2 tablespoons olive oil in a skillet over medium heat; add 2 cloves minced garlic and sauté 30–60 seconds until fragrant (do not brown). Add a pinch of red pepper flakes if desired and remove from heat.

Combine pasta and sauce: Divide the drained pasta into two portions that match the two chosen sauces (roughly equal by weight). For each portion, add about 1 cup sauce per 8 ounces pasta; toss in the saucepan or a wide skillet over low heat, adding 2–4 tablespoons reserved pasta water as needed to coat the noodles and create a glossy emulsion. For pesto, use about 1/2 to 3/4 cup for 8 ounces and loosen with pasta water.

Proteins & add-ins (prepare and fold in)

If using proteins like grilled chicken or cooked sausage, warm them briefly in the sauce pan while the sauce is heating (2–3 minutes) so they integrate with the sauce’s flavor.

Sauté vegetables: For mushrooms, heat 1 tablespoon olive oil in a skillet over medium-high heat, add mushrooms, season with a pinch of salt, and cook until browned and their liquid evaporates (4–6 minutes). For spinach, wilt in a skillet with 1 tablespoon olive oil for 1–2 minutes.

Fold the warmed proteins and vegetables into the sauced pasta just before serving so everything is evenly distributed. If a sauce seems dry, add reserved pasta water 1 tablespoon at a time until desired consistency is reached.

Finishes & plating

Taste and adjust: Season each sauced pasta with black pepper and additional salt if needed. Stir in lemon zest to brighten cream or oil-based sauces.

Garnish: Sprinkle grated Parmesan and torn or chiffonade basil over each portion. Drizzle with 1/2 teaspoon extra-virgin olive oil per serving if desired.

Serve immediately while hot. Offer extra grated Parmesan, crushed red pepper, and chopped basil at the table.
