Prepare bread and spread

Lay the 4 slices of bread on a clean surface. Evenly spread about 1 tablespoon of mayonnaise over one side of two slices (these will be the inside faces). If you prefer less mayo, adjust to taste. Optionally spread the remaining tablespoon on the outside of the other two slices if you plan to grill lightly for a crispy exterior (or use butter for grilling).

Assemble ham and cheese

On the two mayo-spread inside faces, divide the ham slices evenly (3 slices per sandwich). Top the ham with approximately 2 ounces of mozzarella per sandwich (either a couple of slices or a sprinkle of shredded). Season lightly with up to 1/2 teaspoon black pepper across the two sandwiches if desired. Add fresh basil or lettuce leaves on top of the cheese if using.

Close sandwiches

Place the remaining two bread slices on top, mayo/butter side out if you plan to toast. Press gently to compress the sandwich slightly so filling holds together.

Optional toasting (stovetop)

Heat a nonstick skillet or griddle over medium heat. If you spread butter on the outside, place the sandwiches butter-side down in the pan. If you used mayo on the outside, that will also brown nicely. Cook for about 2 to 3 minutes per side, pressing lightly with a spatula, until the bread is golden brown and the mozzarella has started to melt. Flip carefully and toast the other side for another 2–3 minutes. Total toasting time: 4–6 minutes.

Optional toasting (oven broil)

Preheat the oven broiler on high and place assembled sandwiches on a baking sheet. Broil 2–4 inches from the heat for about 1–2 minutes per side, watching closely to avoid burning, until bread is toasted and cheese is melted. Flip halfway through if needed.

Slice and serve

Remove sandwiches from skillet or oven. Let rest for 1 minute, then cut each sandwich in half diagonally or down the middle. Serve warm. Makes 2 sandwiches (4 halves).
