Method

Fruit

1

Prepare watermelon

Cut seedless watermelon into 1-inch cubes. Pat dry briefly with paper towel if extra juicy. Place in a medium bowl and refrigerate until assembly.

2

Prepare pineapple

Peel and core pineapple. Slice into 1-inch chunks or use a melon baller for balls. Place in a bowl and refrigerate.

3

Prepare grapes and berries

Rinse green and red grapes thoroughly; remove stems if preferred. Rinse blueberries and strawberries; hull strawberries and halve or quarter large berries. Drain in a colander and pat dry gently.

4

Prepare kiwi, mango, orange

Peel and slice kiwis into 1/4-inch rounds. Peel and cube mango into bite-size pieces. Segment the orange by cutting away peel and membrane to create clean sections. Place each prepared fruit in separate bowls to keep colors distinct during arrangement.

5

Chill

Keep all prepared fruit chilled (in refrigerator) until just before assembly so the platter looks fresh and firm.

Garnish & Extras

6

Make honey-lime drizzle

In a small bowl whisk together honey, fresh lime juice, and lime zest until smooth. If honey is thick, warm for 10 seconds in microwave or whisk vigorously to combine. Set aside.

7

Toast coconut (optional)

In a small dry skillet over medium heat, toast coconut flakes, stirring constantly until golden brown (2–4 minutes). Transfer to a plate to cool.

8

Chop pistachios (optional)

Roughly chop pistachios and place in a small bowl for sprinkling at the end.

9

Prepare mint and flowers

Rinse mint leaves and pat dry. Pick small sprigs for garnish. If using edible flowers, rinse gently and dry on paper towel.

Assembly

10

Choose a large platter or wooden board and start arranging fruit from the center outward or along one edge, depending on desired look. Begin by placing larger items (watermelon and pineapple) in small clusters to create anchors.

11

Fill spaces around the anchors with medium items (mango, orange segments, halved strawberries) creating contrasting color groupings so similar colors aren't adjacent.

12

Tuck kiwI slices and blueberries into gaps for brightness and texture. Drape small clusters of red and green grapes (or single grape bunches) in flowing lines to add movement across the platter.

13

Scatter toasted coconut flakes and chopped pistachios sparingly over sections you want a crunchy contrast. Reserve most in small bowls if guests prefer to add themselves.

14

Drizzle the honey-lime mixture lightly and evenly over parts of the platter (avoid drizzling over delicate berries if plating far ahead). Offer extra drizzle in a small bowl on the side.

15

Garnish with fresh mint sprigs and a few edible flowers for color. Add small serving forks or toothpicks for easy picking.

16

Keep platter chilled until serving. If preparing more than 30 minutes ahead, refrigerate uncovered for 10–15 minutes before serving to firm fruit but avoid condensation by not covering tightly.

Serve

17

Place small bowls of extra honey-lime drizzle, toasted coconut, and chopped pistachios near the platter so guests can customize. Serve with tongs or small forks and napkins.
