Muddle
In a cocktail shaker, add the fresh mint leaves and simple syrup. Gently muddle the mint just until the oils are released (about 6–8 light presses). Avoid pulverizing the leaves to prevent bitterness.
Add spirits and citrus
Add Wheatley Vodka, limoncello, and fresh lemon juice to the shaker with the muddled mint.
Shake
Fill the shaker with ice (about 1 cup), secure the lid, and shake vigorously for 12–15 seconds until the exterior of the shaker is very cold and slightly frosted.
Double strain
Double-strain the cocktail into a chilled coupe or a rocks glass over fresh ice using a Hawthorne strainer and a fine mesh strainer to remove mint bits and small ice shards.
Garnish & Serve
Express the lemon zest over the top of the drink to release oils (if using), then garnish with a fresh mint sprig and a lemon wheel on the rim or floated on top.
Serve immediately. The cocktail should be bright, slightly sweet from the limoncello and simple syrup, with a cooling hint of mint and clean vodka backbone. Recommend serving with a small straw to revive the aromatics as you sip.
