Cocktail
Prepare glass
Lightly chill a highball or Collins glass by filling it with ice and setting aside while you build the cocktail.
Muddle cucumber and mint
Discard the ice from the chilled glass. In a cocktail shaker, add 4 cucumber slices and 8–10 fresh mint leaves. Add the 0.5 oz simple syrup and 0.75 oz fresh lime juice. Gently muddle 6–8 times — press to release cucumber juice and bruise the mint without tearing it. You want aromatic oils, not bitter chlorophyll.
Build the cocktail
Add 2 oz rain cucumber vodka to the shaker along with 4 ice cubes. Shake briefly (about 6–8 seconds) just to chill and combine — this is primarily a gently mixed drink, not a long shake, to preserve effervescence.
Finish and serve
Discard the ice from the prepared glass and add about 1 cup crushed ice. Double-strain the shaker contents into the glass using a hawthorn strainer and a fine mesh strainer to remove mint bits and cucumber pulp. Top with 2 oz club soda (adjust to taste). Stir gently once or twice with a bar spoon to integrate soda.
