Shape and fry shells

Heat neutral oil in a deep, heavy skillet or saucepan to 350°F (175°C) or until a small piece of wonton sizzles immediately. While oil heats, take a wonton wrapper and fold it over a small metal taco mold, mini muffin tin rim, or use tongs to drape it into the oil so it holds a taco shape. Fry 3–4 wontons at a time (don’t overcrowd) for 30–45 seconds per side, turning once, until light golden and crisp. Use tongs to remove and drain on a paper towel-lined rack. Sprinkle lightly with fine salt while still hot. Repeat with remaining wrappers. Allow shells to cool and crisp fully before filling.

If you don’t have a taco mold, you can fold the wonton in half across a wooden spoon handle or drape over the handle of a wooden spoon across the pan so they crisp into a taco shape; fry times are the same.

Prepare filling

Place softened cream cheese in a medium mixing bowl and whip lightly with a spatula until smooth. Add the finely chopped crab meat (drain any excess liquid), minced white and light-green scallion parts, and finely diced red bell pepper. Stir to combine.

Season the mixture with soy sauce, Worcestershire sauce, garlic powder, sesame oil, and freshly ground black pepper. Taste and adjust seasoning — add up to an additional 1/4 tsp soy sauce or 1/4 tsp salt if needed. The filling should be well seasoned but not runny.

For a firmer filling that holds shape in the shell, refrigerate the mixture for 15–30 minutes before assembling. For hot filling, you can briefly warm the mixture in a skillet over low heat for 1–2 minutes, stirring, but ensure it isn’t overly loose.

Assembly & Garnish

Fill and garnish tacos

Spoon about 1 heaping tablespoon (roughly 15–18 g) of crab rangoon filling into each cooled wonton shell. Smooth or mound the filling so it sits nicely in the shell. Top each taco with a pinch of thinly sliced scallions and a few thin strips of red bell pepper for color and crunch. Sprinkle with sesame seeds if using.

Serve

Arrange tacos on a platter. Serve immediately with sweet and sour sauce in a small bowl for dipping at the side. If not serving right away, keep filled tacos on a cooling rack at room temperature for up to 30 minutes—filled shells will soften over time, so assemble as close to service as possible.
