Prepare filling
Finely chop the imitation crab into small pieces (about 1/8-inch). In a mixing bowl, add the softened cream cheese and beat with a fork until smooth. Stir in the chopped crab, minced garlic, minced scallions, soy sauce, sesame oil, sugar, lime juice (or rice vinegar), and white pepper until evenly combined. Taste and adjust seasoning: a little more soy for salt, more lime for brightness. Chill the mixture for 10–15 minutes to firm slightly — this makes assembly easier.

Fill and fold wontons
Set up an assembly area: a damp kitchen towel, a small bowl with the beaten egg mixed with 1 tsp water (egg wash), and the wonton wrappers stacked on a flat surface. Place one wrapper in your palm or on the towel. Spoon about 1 teaspoon (≈5–7 g) of the crab filling into the center of each wrapper — do not overfill. Brush the edges of the wrapper lightly with egg wash. Fold into a traditional triangle by folding one corner over to the opposite corner, pressing all air out and sealing edges; optionally, bring the two opposite corners of the triangle together and press to form the classic crab rangoon purse. Ensure a tight seal to prevent oil ingress. Place assembled wontons on the damp towel, not touching each other.

Heat oil
Pour oil into a heavy-bottomed pot or Dutch oven to a depth of about 2 inches. Heat the oil over medium-high heat until it reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test by dropping a small piece of wrapper into the oil — it should sizzle and brown in about 30–40 seconds.
Fry wontons
Working in batches (do not crowd), carefully add 6–8 wontons to the hot oil. Fry, turning occasionally, until golden brown and crisp, about 2–3 minutes. Use a slotted spoon to transfer to a paper-towel-lined baking sheet to drain. Repeat with remaining wontons. Maintain oil temperature between 325–350°F (160–175°C); reduce heat slightly between batches if it rises.
