Method
Main
Prepare broccoli
Wash the broccoli and cut into medium-sized florets (about 1 to 1½ inches). If using the stem, peel the tough outer layer and cut the stem into 1/4- to 1/2-inch slices so they cook at the same rate as florets.
Blanch (optional for bright color and tender-crisp texture)
Bring a large pot of salted water to a rolling boil. Add broccoli florets and stems and cook for 2 minutes until bright green and slightly tender. Immediately transfer to a bowl of ice water to stop cooking. Drain thoroughly and pat dry. (If you prefer a deeper roasted flavor, skip blanching and cook directly in the pan.)
Sauté aromatics
In a large skillet over medium heat, warm the olive oil and butter until the butter melts and begins to foam. Add the minced garlic and cook 30–45 seconds, stirring constantly, until fragrant but not browned.
Season and finish
Lower heat to medium. Sprinkle the lemon zest, lemon juice, kosher salt, black pepper, and red pepper flakes over the broccoli. Toss to coat and cook 30–60 seconds more to meld flavors. Taste and adjust seasoning.
Add cheese (optional)
If using Parmesan, sprinkle it over the hot broccoli and toss briefly so it melts and adheres.
Garnish / Serve
Transfer broccoli to a serving bowl or platter. Scatter the toasted almonds or pine nuts and chopped parsley over the top.
Serve immediately as a side. Leftovers keep in an airtight container in the refrigerator for up to 3 days; reheat gently in a skillet to preserve texture.
