In a medium saucepan set over medium heat, melt the butter. When foaming subsides, add the flour and whisk continuously for 1 to 1½ minutes until it turns a pale golden color and smells slightly toasty (this cooks off the raw flour taste).

Prepare roux

Slowly pour in the beer while whisking to prevent lumps. Once combined and mostly incorporated, add the milk and continue to whisk until the mixture is smooth and begins to thicken, about 3–4 minutes.

Add liquids

Reduce heat to low. Stir in the cream cheese cubes until melted and smooth. Gradually add the grated cheeses in small handfuls, stirring after each addition until fully melted and incorporated before adding more. Maintain low heat to prevent the cheese from seizing.

Melt cheeses

Stir in the Dijon mustard, Worcestershire sauce, hot sauce (if using), smoked paprika, salt, and black pepper. Taste and adjust seasoning. If the dip is too thick, whisk in up to 1/4 cup additional beer (or milk) a tablespoon at a time until you reach a creamy, dippable consistency.

Season

If using raw fresh corn and you prefer a toasty note, heat a small skillet over medium-high heat with a teaspoon of oil and sauté the corn kernels, stirring occasionally, until they begin to char lightly, 3–5 minutes. If using thawed frozen or pre-cooked corn, simply warm through in the skillet for 2 minutes.

Cook corn (if raw or toasting)

Stir the warm corn and most of the sliced green onions into the beer cheese, reserving a little for garnish. Cook together on low for 1 minute to marry flavors. Adjust seasoning one more time.

Combine corn with dip

Transfer the beer cheese dip to a warmed shallow bowl. Garnish with remaining green onions and chopped cilantro or parsley. Serve immediately with tortilla chips, pretzel bites, or sliced baguette. Keep remaining dip warm over a low double boiler or a small slow cooker on the warm setting for parties.
