Method
Drink
Prepare glass
Choose a large wine glass or an old-fashioned glass. Fill the glass about three-quarters full with ice cubes to chill the glass and keep the cocktail cold.
Add Aperol
Pour 3 tablespoons (about 1.5 oz) of Aperol over the ice.
Add Prosecco
Slowly pour 4 ounces of chilled Prosecco into the glass. Pour gently to preserve bubbles and to help layer the drink slightly.
Top with soda
Add 1 ounce of chilled soda water on top. Stir very gently once or twice with a bar spoon to combine — do not over-stir, keep it light to maintain effervescence.
Garnish and serve
Garnish with one fresh orange slice on the rim or dropped into the glass. Serve immediately while cold and fizzy.
