Preparation Steps
Prepare the Catfish
In a bowl, coat the catfish fillets with creole seasoning. Heat oil in a skillet over medium heat and fry the catfish for about 4-5 minutes on each side until golden brown and cooked through. Remove and let drain on paper towels.
Prepare the Slaw
In a mixing bowl, combine the shredded cabbage, diced tomatoes, and chopped cilantro. Toss to mix evenly.
Assemble the Tacos
Warm the flour tortillas in a skillet for about 30 seconds on each side. Place a piece of fried catfish on each tortilla, top with the cabbage slaw, and drizzle with Sriracha mayo. Serve with pickled jalapeños on the side.
