Prepare the Vegetables

Julienne the carrot, slice the cucumber, and grill the red onion until tender and slightly charred.

Cook the Edamame

Boil the shelled edamame in salted water for about 3-5 minutes until tender. Drain and set aside.

Toast the Cashews

In a dry skillet over medium heat, toast the cashews until golden brown, stirring frequently for about 5 minutes.

Assemble the Salad

In a large bowl, combine the edamame, julienned carrot, grilled red onion, sliced cucumber, toasted cashews, chopped basil, and chopped cilantro. Toss gently to combine.

Add Fried Wontons

Top the salad with fried wontons just before serving to maintain their crunch.

Serve with Vinaigrette

Drizzle with pickled ginger vinaigrette and serve immediately.
