Preparation and Cooking
Prepare the Rosemary Garlic Rub
In a small bowl, combine the chopped fresh rosemary, minced garlic, olive oil, salt, and black pepper. Mix until well combined.
Rub the Veal Chops
Pat the veal chops dry with paper towels. Rub the rosemary garlic mixture evenly over both sides of the chops. Let them marinate at room temperature for about 30 minutes.
Preheat the Grill
Preheat your grill to medium-high heat.
Grill the Veal Chops
Place the marinated veal chops on the grill. Cook for about 4-5 minutes on each side for medium-rare, or until internal temperature reaches 145°F (63°C).
Rest the Chops
Remove the chops from the grill and let them rest for 5 minutes before serving.
Serve with Seasonal Vegetables
Serve the grilled veal chops with your choice of seasonal vegetables, such as grilled asparagus, zucchini, or bell peppers.
