Make the Dough

In a large mixing bowl, combine the flour and salt. Make a well in the center, add the eggs and olive oil, and mix until a dough forms. Knead for about 5-7 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Prepare the Filling

In a bowl, mix the ricotta cheese, orange zest, lemon zest, fresh thyme, and salt until well combined. Set aside.

Roll Out Dough

Divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin.

Assemble Ravioli

Place small mounds of the citrus filling on one sheet of dough, leaving space between each mound. Moisten the edges with water, and place another sheet of dough over the top. Press down to seal, and cut into squares.

Cook Ravioli

In a large pot of salted boiling water, cook the ravioli for 3-4 minutes until they float to the surface. Remove and drain.

Prepare the Sauce

In a skillet, melt the butter over medium heat. Add the fresh orange juice and season with salt and black pepper. Let simmer for 2-3 minutes.

Serve

Add the cooked ravioli to the sauce and gently toss to coat. Serve warm, garnished with chopped parsley.
