Juice and combine
Juice enough blood oranges to measure 1 cup of fresh blood orange juice (about 2-3 medium blood oranges). In a large pitcher, combine the blood orange juice, 2 tablespoons fresh lemon juice, and 1/4 cup simple syrup. Stir gently to combine.

Add sparkling water
Just before serving, slowly pour 1 liter of chilled Lurisia sparkling mineral water into the pitcher to preserve carbonation. Stir gently with a long spoon to mix — avoid aggressive stirring which will flatten the soda.

Prepare zest and mint
Finely grate 1 teaspoon of blood orange zest and add it to the pitcher. Lightly clap 6 mint leaves between your palms to release their aroma, then add them to the pitcher as well.

Optional aromatics and seasoning
If using, add 3 drops of orange blossom water and a small pinch of salt to the mixture. The orange blossom water is very concentrated—add sparingly and taste. The pinch of salt brightens the flavors; stir gently to incorporate.

Fill serving glasses with 4 ice cubes each. Pour the blood orange soda over the ice, dividing evenly (recipe yields about 4 servings). Garnish each glass with a blood orange wheel and a mint sprig. Serve immediately to preserve effervescence.
