Prepare glass (optional)
If you prefer a salted rim, rub a lime wedge around the outside lip of a highball or Collins glass then dip the lip into a small plate with the coarse salt to lightly coat. Set the glass aside.

Build the drink
Fill the prepared glass with cubed ice, leaving room at the top for the sparkling water. Pour 2 oz blanco tequila and 0.75 oz fresh lime juice over the ice. If you prefer a touch of sweetness, add 0.25 oz agave syrup.

Top with sparkling water
Gently top the tequila and lime with about 4 oz chilled Topo Chico (or other sparkling mineral water). Pour slowly to preserve carbonation and avoid overflow. Stir once gently with a bar spoon to combine — one slow turn is enough.

Garnish and serve
Slip a lime wheel or wedge onto the rim (or drop it into the drink). Serve immediately while sparkling water is lively.
