Preheat and prepare bread
Preheat oven to 375°F (190°C). Spread the cubed bread in an even layer on a baking sheet.

Season cubes
In a large bowl, whisk together 3 tbs extra-virgin olive oil, 1 tsp garlic powder, 1 tsp salt, and 1 tsp freshly ground black pepper. Add the bread cubes and toss until evenly coated.

Bake and finish with Parmesan
Spread the coated cubes back on the baking sheet in a single layer. Bake 12–15 minutes, stirring once halfway, until golden and crisp. Remove from oven, immediately toss with 1 cup grated Parmesan while still warm so it adheres. Cool on a rack.
Caesar Dressing

Combine aromatics
In a medium bowl, mash the 4 chopped anchovy fillets with the 2 grated garlic cloves into a paste using the back of a spoon or a fork.

Emulsify
Add 1 egg yolk, 1 tsp Dijon mustard, 2 tbs lemon juice, and 1 tsp Worcestershire sauce to the anchovy-garlic paste. Whisk vigorously until combined. Slowly drizzle in 1 tbs extra-virgin olive oil and 1 tbs neutral oil in a thin stream while whisking continuously to create a smooth emulsion.

Finish dressing
Whisk in 3 tbs grated Parmesan, then season with 1 tsp salt and 1 tsp freshly ground black pepper. Taste and adjust acidity with more lemon juice or seasoning as desired. If dressing is too thick, whisk in up to 1–2 tbs water to reach desired consistency.

If using raw egg yolk, you may use pasteurized egg yolk for food safety or substitute 1–2 tbs mayonnaise for a similar texture.
Salad Assembly

Toss greens and parsley
Place 6 cups torn romaine and 1 cup chopped parsley in a large salad bowl. Add 2–3 tbs of the prepared dressing and toss lightly to coat. Add more dressing as needed — aim for a light, even coating rather than drowning the leaves.

Scatter the warm Parmesan croutons over the dressed greens and sprinkle 3 tbs freshly grated Parmesan on top. Toss gently once more to distribute.
