Prepare cured meats
Remove meats from packaging and lay flat on a cutting board. If slices are large, cut into 2–3 inch (5–7 cm) lengths. Create visual interest by arranging meats in different folds: gently ruffle prosciutto into loose ribbons, fold salami slices into quarters or cones, and fan coppa slices. Place each variety in separate zones on the platter to give guests choices.
Pickles & Marinated Vegetables
Drain and portion pickled items
Drain olives, cornichons, marinated artichokes and roasted peppers in a fine-mesh sieve for 1–2 minutes. Pat with paper towel if the marinade is excessive. If olives are whole, optionally pit them. Place olives in a small bowl or nestle them in a shallow well on the board to contain brine. Arrange cornichons and pickled red onions in small clusters near the meats. Halve large artichoke hearts and tuck them between cheeses or crackers.

Arrange crackers and condiments
Place crackers in small stacks or slightly overlapping rows on one or two edges of the platter so they are easy to grab. Spoon whole-grain mustard into a small ramekin and position it near the meats and crackers. Pour honey into a second small ramekin (or drizzle a thin ribbon across a cheese wedge) for sweet contrast. If using cornichon or olive skewers, thread 2–3 items per skewer and lay them decoratively across the platter or stand them in a small cup.

Prepare and place cheeses
Bring cheeses to room temperature 30–60 minutes before serving. Place the soft cheese whole on the board with a small knife for spreading; slice or cube the aged cheese into bite-size pieces and fan them near one edge of the board. Position cheeses opposite the crackers so guests can build bites easily.
Final assembly & garnish
Start from the center or a focal point and work outward: set bowls (olives, mustard, honey) first, then tuck meats around them. Fill gaps with pickled vegetables and roasted pepper strips to add color. Scatter small clusters of crackers, and intersperse cheese pieces. Garnish with a few sprigs of parsley and rosemary for color and aroma. Check balance—make sure there are multiple flavor pairings near each other (meat + cheese, meat + pickles, crackers + mustard). Serve immediately or cover loosely and refrigerate up to 2 hours; bring back to room temperature before serving for best flavor.
