Preparation of Chicken Wings

Clean and Dry the Chicken Wings

Rinse the chicken wings under cold water and pat them dry with paper towels.

Season the Wings

In a large bowl, toss the chicken wings with olive oil, salt, and black pepper until they are well coated.

Smoking the Wings

Prepare the Smoker

Preheat your smoker to 225°F (107°C) using your choice of wood chips (hickory or applewood works great).

Smoke the Wings

Place the seasoned chicken wings in the smoker and smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Making Buffalo Sauce

Combine Sauce Ingredients

In a saucepan over medium heat, combine hot sauce, unsalted butter, garlic powder, paprika, and cayenne pepper. Stir until the butter is melted and the sauce is well mixed.

Simmer the Sauce

Reduce heat to low and let the sauce simmer for 5 minutes, stirring occasionally.

Tossing and Serving

Toss Wings in Sauce

Once the wings are smoked, remove them from the smoker and place them in a large bowl. Pour the buffalo sauce over the wings and toss until evenly coated.

Prepare Vegetables

While the wings are resting, wash and cut the carrots and celery into sticks.

Serve the spicy buffalo chicken wings with carrot and celery sticks on the side.
