Slice the Strawberries

Drain the mandarin oranges if using canned ones. If using fresh, peel and segment them.
Chop the Red Onion
Peel and finely chop the red onion into small pieces.
Chop the Roasted Almonds
Roughly chop the roasted almonds for added texture.
Crumble the Cheese
Crumble the Wensleydale mango cheese into small pieces for easy mixing.
Combine the Salad Ingredients
In a large salad bowl, combine the spinach, sliced strawberries, mandarin oranges, dried cranberries, chopped red onion, chopped almonds, and crumbled cheese.

In a small bowl or jar, combine the olive oil, orange juice, honey, and Dijon mustard. Whisk or shake until well combined.
