Prep Oysters

Clean and shuck
Rinse oysters under cold running water and scrub each shell to remove grit. Using an oyster knife and a towel or glove, carefully shuck each oyster: insert the knife at the hinge, twist to pop, cut the muscle, and free the top shell. Leave each oyster in the deeper half-shell, trim excess top shell edges so oysters sit flat. Collect any liquor that runs out and keep oysters chilled on a tray over ice while you work.

Preheat oven to 450°F (230°C). Position a rack in the middle of the oven. Place a large, rimmed baking sheet on the rack while preheating (this helps get a quick roast).

Make compound butter
In a medium bowl, combine the softened butter, minced garlic, minced shallot, chopped parsley, chives, lemon zest, Dijon mustard, chopped capers, hot sauce (if using), salt and pepper. Mix thoroughly until evenly incorporated. Taste and adjust seasoning — it should be bright and slightly tangy to cut the oyster brine.

Prepare toasted breadcrumb-Parmesan topping
Heat 2 tablespoons olive oil in a small skillet over medium heat. Add panko breadcrumbs and cook, stirring frequently, until breadcrumbs are golden-brown and crisp, 3–5 minutes. Remove from heat and let cool slightly. Transfer toasted panko to a bowl and stir in grated Parmesan and smoked paprika. Adjust salt if needed; the capers and Parmesan add saltiness, so be conservative.

Spoon compound butter into a piping bag or a small zip-top bag with the corner snipped, for easier portioning. Alternatively, use a small spoon.

Place shucked oysters on the preheated rimmed baking sheet (or on a bed of coarse salt or rock salt to steady shells). Pipe or spoon about 1 teaspoon of compound butter onto each oyster, covering the exposed meat lightly but not burying it. Each oyster should have enough butter to melt into the liquor and flavor the oyster.

Add breadcrumb topping
Sprinkle roughly 1 teaspoon of the toasted panko-Parmesan mixture over the buttered oysters. The topping should form a thin, slightly crunchy crust after roasting.

Roast
Set the baking sheet on the preheated rack and roast in the oven at 450°F (230°C) for 6–8 minutes, or until butter is bubbling, topping is golden and edges of oyster begin to curl slightly. For a browned gratin finish, switch to broil for 1–2 minutes—watch closely to avoid burning.
