    Prepare fruit

    Rinse all berries gently under cold water and drain in a sieve. Hull and quarter the strawberries so pieces are bite-sized. Pat berries dry on paper towels to avoid making the parfait soggy.

    Layering — first layer

    Spoon about 1/4 cup of Greek yogurt into the bottom of each serving glass or bowl (makes 2 servings). Smooth gently with the back of the spoon to create an even base.

    Layering — granola

    Sprinkle about 1/4 cup granola over the yogurt layer in each glass (reserve remaining granola to maintain crunch for later layers).

    Layering — fruit

    Scatter a mix of berries (roughly 1.5 oz total per cup / per serving) over the granola so you have a colorful middle layer. Use some strawberries, blueberries and raspberries for texture and flavor contrast.

    Repeat layers

    Add another 1/4 cup of Greek yogurt on top of the fruit, followed by another 2 tablespoons granola and a few more berries. This should create two visible yogurt layers and two granola/fruit layers in each glass.

    Finish and drizzle

    Finish each parfait with a final dollop (about 1–2 tablespoons) of yogurt, a sprinkle of the remaining granola (about 1–2 tablespoons), and a generous drizzle of 1½ tablespoons local honey per serving. If using, grate 1/2 teaspoon lemon zest over each parfait for brightness and add a small pinch of flaky sea salt to contrast the sweetness.

    Garnish and serve

    Top each parfait with a couple of whole berries and 3 fresh mint leaves. Serve immediately so the granola stays crunchy. If you need to hold them for up to 1 hour, keep granola separate and add just before serving.
