Prepare fruit
Wash the grapefruits under cool running water. Using a sharp knife, slice each grapefruit in half crosswise.

Juice grapefruits
Using a manual citrus juicer or an electric juicer, press each grapefruit half to extract the juice into a measuring cup or pitcher. Strain the freshly squeezed juice through a fine-mesh sieve into a bowl or pitcher to remove seeds and most pulp. Use the back of a spoon to press pulp to recover additional juice if desired.

Adjust sweetness and balance
Taste the strained grapefruit juice. Stir in the granulated sugar and pinch of fine sea salt. If the grapefruit is very tart, dissolve the sugar into the juice by stirring briskly; if needed warm 1–2 tablespoons of the water and dissolve the sugar first, then add to the juice. Add the cold water and stir to combine. Taste and adjust: add another 1/2–1 teaspoon sugar if you prefer sweeter juice, or more water to dilute.

Chill and serve
Fill a tall glass with ice cubes. Pour the grapefruit juice over the ice. Garnish with fresh mint leaves if using. Serve immediately chilled.

Storage
Store any leftover juice in an airtight container or pitcher in the refrigerator for up to 48 hours. Stir before serving as separation may occur.
