Method

Mignonette + Horseradish

Combine aromatics

In a small bowl, combine the minced shallot, sugar, fine sea salt, and freshly ground black pepper. Stir to evenly distribute the sugar and salt so the shallot begins to macerate.

Add vinegars and horseradish

Add the champagne (or white wine) vinegar and freshly grated horseradish to the shallot mixture. Stir well so the horseradish is fully incorporated into the liquid.

Finish and rest

Add the finely grated lemon zest and, if the mignonette is very sharp, a teaspoon of cold water to slightly mellow acidity. Taste and adjust: add up to an extra 1/4 tsp sugar or a pinch more salt if needed. Cover and refrigerate for at least 15 minutes (30 minutes preferred) to let flavors marry.

Chill glass

Place your coupe or martini glass in the freezer or fill with ice water to chill while you prepare the cocktail.

Build and shake

In a cocktail shaker, add the vodka (3 tbs), dry vermouth (1 tsp), fresh lemon juice (1 tsp), and the gold liqueur or yellow chartreuse (1 tsp). Add a cup of ice, cap the shaker, and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

Strain

Discard the ice water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass to remove any tiny ice shards and ensure a silky texture.

Garnish

Express a lemon twist over the cocktail to release oils, run it around the rim if desired, and drop it into the drink. For a luxurious touch, carefully place a tiny sprinkle (a pinch) of edible gold leaf flakes on the surface or on the lemon twist.

Oysters & Serving

Prepare bed

Fill a shallow serving platter with crushed ice to create a stable bed for the oysters.

Shuck and arrange

Shuck the oysters carefully, retaining as much liquor in the shell as possible. Arrange 6 oysters on the crushed-ice bed, keeping them level so they don't spill.

Dress oysters

Spoon approximately 1/2 tsp of the chilled mignonette onto each oyster (or offer the mignonette on the side for guests). Add a tiny dot (about 1/8 tsp) of freshly grated horseradish on top of each oyster if you want a more pronounced bite.

Serve

Garnish the platter with lemon wedges. Serve immediately alongside the chilled Golden Imperial cocktail. Advise guests to eat oysters one at a time, following each with a small sip of the cocktail to experience the interplay of brine, acidity, horseradish heat, and the cocktail's citrus/golden notes.
