Pick and check crab

Gently pick through the lump crab meat to remove any shells or cartilage. Pat the crab lightly with paper towels to remove excess moisture — you want it moist but not watery.

Prepare dry binder

In a medium bowl combine the crushed buttery crackers (or panko mixed with 1 tablespoon melted butter) and grated Parmesan. Stir to combine so the crumbs are evenly coated with cheese (and butter if using panko).

Mix wet ingredients

In a separate small bowl whisk together the egg, mayonnaise, Dijon mustard, lemon zest, lemon juice, and finely chopped parsley until smooth.

Combine crab mixture

Add the picked crab meat to a large mixing bowl. Sprinkle the Old Bay, sea salt, and black pepper over the crab. Pour the wet mixture over the crab and gently fold with a rubber spatula to coat the lumps without breaking them up completely.

Incorporate crumbs

Add the crumb/Parmesan mixture and sliced green onions to the crab mixture. Gently fold until the mixture holds together when pressed — it should be cohesive but still show chunks of crab. If the mixture is too loose, add up to 2 more tablespoons of crumbs; if too dry, add 1 teaspoon mayonnaise.

Form the crust

Turn the mixture out onto a sheet of plastic wrap or parchment. Press into a disc about 1/2-inch thick (or divide into two smaller discs). Wrap tightly and refrigerate for at least 30 minutes to firm. Chilling helps the crust hold shape when searing or baking.

For Searing / Finishing

Preheat pan

When ready to finish, remove the chilled crab crust from the refrigerator and unwrap. Heat a large nonstick or stainless-steel skillet over medium heat. Add the neutral oil and 1 tablespoon of butter; let the butter foam and the pan become hot but not smoking.

Sear the crust

Gently place the crab crust disc in the pan. Press lightly with a spatula to ensure contact. Cook undisturbed for 3–4 minutes until the bottom is golden brown and forms a crust. Carefully flip (use two spatulas if needed) and add the remaining 1 tablespoon butter to the pan, tilting the pan and spooning melted butter over the top for 2–3 minutes until the second side is golden and the interior is just cooked through. Total cook time should leave the interior moist; do not overcook.

Alternative oven finish

If you prefer to bake, place the chilled disc on a parchment-lined baking sheet and bake in a preheated 375°F (190°C) oven for 12–15 minutes until heated through and golden on top. For a crisper top, broil 1–2 minutes at the end, watching closely.

Rest and serve

Transfer the crab crust to a cutting board and let rest 2 minutes. Garnish with chopped parsley and serve with lemon wedges. Slice into wedges if using a large disc, or serve whole as a base for fish or salads.
