Cocktail
- 1
Muddle
Place the thin cucumber slices (about 1/2 cup) and 8 of the mint leaves into a cocktail shaker or sturdy mixing glass. Add the fresh lemon juice (0.75 oz) and simple syrup (0.5 oz). Using a muddler or the back of a spoon, gently muddle 8–10 times until the cucumber releases juice and the mint is aromatic. Do not over-muddle the mint — bruise gently to avoid bitterness.
- 2
Add spirit and ice
Add the light rum (2 oz) to the shaker. Fill the shaker halfway with ice (about 1 cup cubed).
- 3
Shake
Cap the shaker and shake vigorously for 10–12 seconds until the shaker is cold to the touch and the ingredients are well combined and slightly frothy.
- 4
Double strain into glass
Fill a highball or Collins glass with fresh ice. Using a fine mesh strainer along with the shaker’s strainer (double strain), pour the shaken mixture into the glass to remove cucumber bits and mint fragments.
- 5
Top and garnish
Top the cocktail with club soda (about 2 oz) to taste and gently stir once or twice to combine. Slap the remaining 2 mint leaves between your palms to release aroma and use a mint sprig and a lemon wheel or wedge to garnish the drink. Optionally, add a thin cucumber ribbon on the inside of the glass for presentation.
- 6
Serve
Serve immediately with a straw or stirrer. Encourage the drinker to give it a light stir before sipping so the soda and cocktail integrate fully.
