Combine 1/2 cup granulated sugar and 1/2 cup water in a small saucepan.

Warm over medium heat, stirring until the sugar fully dissolves and the mixture is clear (do not boil).

Remove from heat and let cool to room temperature. Transfer to a sealed container and refrigerate until needed.
Cocktail assembly

Prepare the cucumber
Slice half a medium cucumber into 1/4-inch coins. Reserve one long thin slice or ribbon for garnish.

Add 3/4 oz fresh lime juice and 1/2 oz simple syrup to the cucumber.

Using a muddler, gently muddle the cucumber with the lime juice and simple syrup for about 10–15 seconds — press firmly to bruise and release juices but avoid pulverizing into a pulp. You want fragrant cucumber juice and a little texture.

Add 1.5 oz gin (or vodka if you prefer) and a handful of ice to the shaker.

Briefly shake for 6–8 seconds to chill and integrate the flavors.

Fill a highball or wine glass with ice (about 1 cup). Strain the shaken mixture into the glass over the ice, using a fine mesh strainer if you want to catch cucumber bits.

Top with about 3 oz chilled soda water. Stir gently once or twice to combine without losing carbonation.

Garnish with the reserved cucumber ribbon, a lime wheel on the rim, and an optional mint sprig. Serve immediately.
