Preparation of accoutrements

    Chill serving ware

    Place the small serving bowl or tin that will hold the caviar and the mother-of-pearl spoon in the refrigerator for at least 30 minutes before service. Place the larger bowl for the ice bed in the fridge briefly or fill with ice just before plating so the caviar stays cold.

    Prepare blinis

    If using store-bought chilled blinis, warm them very briefly: preheat oven to 275°F (135°C). Arrange blinis in a single layer on a baking sheet and warm for 4–6 minutes until just warmed through but not browned. If serving room-temperature blinis, keep covered to retain softness. Brush or spread each blini lightly with about 1/6 teaspoon of softened unsalted butter just before plating to add richness.

    Make crème fraîche garnish

    Place 1 cup crème fraîche in a small bowl. Stir in 1 tablespoon of the chopped chives and 1/4 teaspoon of freshly ground black pepper (optional). Cover and keep chilled until service.

    Prepare shallot and egg garnishes

    Divide the minced shallot, crumbled egg yolks, and chopped egg whites into three small bowls. Keep the shallot chilled and covered so it remains sharp but not watery. Keep the egg components chilled and covered as well.

    Arrange lemon and herbs

    Cut lemons into small wedges and arrange on a small plate. Toss the remaining chopped chives and parsley together; place in a small bowl for guests to sprinkle if desired.

Caviar chilling and plating

    Build an ice bed: fill the larger bowl or serving platter with a layer of ice (about 1–2 cups). Place the chilled caviar bowl or tin into the center of the ice so that it sits securely and is surrounded by ice to maintain temperature.

    Open caviar carefully: with the chilled mother-of-pearl or non-metallic spoon, lightly open the caviar container just before service. Avoid metal utensils and avoid stirring or mashing the eggs; keep them whole for best texture and flavor.

    Spoon a portion of caviar (about 1/2 ounce / 14 g per guest) into the chilled serving bowl using the mother-of-pearl spoon. Keep the main container closed and on ice between servings to preserve temperature and flavor.

Service assembly

    Arrange the warmed blinis in a ring on the serving platter. Place small bowls containing crème fraîche, minced shallot, chopped egg yolks, chopped egg whites, chopped chives/parsley, and lemon wedges around the caviar bowl so guests can assemble bites to taste.

    Provide each guest with a mother-of-pearl spoon for the caviar. Recommend portion and pairings: place about 1/2 oz caviar on a buttered blini, add a small dollop (1/2 teaspoon) of crème fraîche, a few pieces of shallot or a sprinkle of egg yolk, finish with a tiny squeeze of lemon or a few chives. Encourage tasting without overloading to allow the caviar flavor to come through.

    Keep the caviar bowl on ice throughout service and return the main tin to refrigeration between refills. Do not leave caviar at room temperature for more than 20–30 minutes at a time.

Optional finishing touches & storage guidance

    For an elevated presentation, place the caviar bowl on a bed of crushed ice mixed with rock salt in a low glass bowl, or present the tin nested in a nest of blinis for a family-style reveal. Garnish the platter with edible flowers or thinly sliced cucumber rounds if desired.

    Storage: refrigerate unopened caviar and use by the producer's 'use by' date. Once opened, keep refrigerated and consume within 48 hours for best quality. Do not freeze caviar.
