Chocolate Mousse

Kirsch Chantilly (Whipped Cream)

Method

Chocolate Crumble

    Preheat oven to 350°F (175°C). Line a small baking sheet with parchment.

    In a medium bowl whisk together flour, cocoa powder, sugar, salt, and instant espresso (if using) until evenly combined.

    Cut cold butter into the dry ingredients using a pastry cutter or your fingertips until the mixture resembles coarse crumbs (pea-sized pieces remain).

    Spread crumble evenly on the prepared baking sheet and bake 12–15 minutes, stirring once halfway, until dry and slightly crisp. Let cool thoroughly on the sheet — it will crisp more as it cools.

Cherry Compote

    In a medium saucepan combine cherries, sugar, and water. Stir to combine and bring to a gentle simmer over medium heat.

    Once simmering, reduce heat to medium-low and cook 6–8 minutes, stirring occasionally, until cherries soften and some juices are released.

    Mix the cornstarch with 1 teaspoon cold water to make a slurry. Stir slurry into the simmering cherries and cook 1–2 more minutes until the liquid slightly thickens.

    Remove pan from heat. Stir in lemon juice and kirsch. Taste and adjust sweetness or kirsch as desired. Transfer to a bowl and cool to room temperature, then chill if making ahead.

Chocolate Mousse

    Place chopped chocolate and butter in a heatproof bowl and set aside.

    In a small saucepan, heat milk just until it begins to steam and small bubbles form at the edge (do not boil).

    In a separate bowl whisk together egg yolks and 1.5 tablespoons sugar until pale and slightly thickened.

    Temper the yolks: slowly drizzle about 1/3 of the hot milk into the yolks while whisking constantly to raise their temperature. Then pour the tempered yolk mixture back into the saucepan with the remaining milk.

    Cook the milk-yolk mixture over low heat, stirring constantly with a wooden spoon or spatula, until it thickens slightly and coats the back of the spoon (about 170–175°F / 77–80°C). Do not let it boil. Remove from heat immediately.

    Pour the hot custard over the chopped chocolate and butter. Let sit 1 minute, then stir gently until smooth and fully melted. Stir in vanilla and salt. Transfer the chocolate mixture to a bowl and let cool to lukewarm (20–30 minutes).

    While the chocolate cools, whip 1.5 cups heavy cream to soft peaks.

    Fold one-third of the whipped cream into the chocolate base to lighten it, using gentle strokes. Fold in remaining cream in two additions until homogeneous and airy. Do not overmix. Spoon or pipe mousse into serving glasses or bowls. Chill at least 2 hours to set (overnight is fine).

Kirsch Chantilly (Whipped Cream)

    Chill a mixing bowl and whisk (or beaters) in the freezer for 10 minutes for best volume.

    Pour 1 cup cold heavy cream into the chilled bowl. Add powdered sugar, kirsch, and vanilla.

    Whip to medium–stiff peaks, being careful not to overbeat. Keep chilled until assembly.

Assembly & Garnish

    Spoon or pipe a layer (about 2–3 tablespoons) of cherry compote into the bottom of each serving glass if you prefer a layered presentation. Alternatively, build from mousse base: place 1/3 of the set mousse into each glass.

    Add 1–2 tablespoons cherry compote on top of mousse (or on top of the base layer), leaving room for more mousse. Top with remaining mousse if you used a bottom compote layer so that each glass has a generous mousse portion.

    Pipe or dollop a generous spoonful (about 1–2 tablespoons) of kirsch chantilly atop each mousse.

    Sprinkle chocolate crumble over the chantilly and around the edge for texture. Scatter dark chocolate shavings and place a fresh cherry on top if using.

    Chill assembled desserts 15–30 minutes to meld flavors, then serve. Store leftovers covered in the refrigerator up to 2 days (crumble retains crunch best if added just before serving).
