Prep & Chill

    Rinse the oysters under cold running water to remove dirt and grit from the shells. Discard any oysters with cracked shells or that don’t close when tapped.

    Spread the crushed ice on a large serving platter or shallow bowl to create a stable bed for the oysters. Mound enough ice to hold all 12 oysters securely and keep them cold.

    Place the oysters on the bed of crushed ice, hinge (pointed end) toward you or slightly downward to retain the liquor inside the shell. Keep refrigerated until ready to shuck (or proceed immediately to shucking).

Make the Mignonette

    In a small bowl combine the red wine vinegar, finely minced shallot, black pepper, salt, and sugar (if using). Stir until salt and sugar dissolve. Taste and adjust: it should be bright and tangy with a mild shallot bite. Refrigerate until service.

Shucking the Oysters

    Safety & positioning

    Cover your non-dominant hand with a thick kitchen towel or wear a cut-resistant glove. Hold the oyster with the hinge pointed toward you and the flatter shell upward.

    Insert the knife

    Insert the tip of the oyster knife into the hinge (the pointed back end) and wiggle gently while applying steady pressure until you feel the shell pop. Do not force violently; small, controlled twists are safer.

    Open and detach

    Slide the knife along the top inside of the shell to sever the muscle that holds the shell closed, then lift off the top shell. Keeping the oyster level, slide the knife under the oyster to sever the bottom muscle so the oyster sits loose in the half shell with its natural liquor (juices) intact.

    Inspect each oyster for shell fragments, remove any with the tip of the knife, and place the half-shell oysters on the crushed ice bed so they remain upright and chilled.

Assemble & Serve

    Arrange the 12 shucked oysters on the chilled ice bed evenly. Garnish the platter with lemon wedges and a few sprigs of parsley or microgreens for presentation.

    Provide small spoons or mini forks and three condiment bowls: one with the chilled mignonette, one with cocktail sauce, and one with prepared horseradish and hot sauce (mix to taste). Offer fresh lemon wedges for squeezing over the oysters.

    Recommend tasting suggestion: start with a clean oyster (no sauce) to appreciate the briny liquor, then try with a drop of mignonette, a dab of horseradish, or a squeeze of lemon. Serve immediately and keep leftover unopened oysters refrigerated; discard any shucked oyster not eaten within 2 hours.
