Prepare the Vegetables

In a skillet, heat olive oil over medium heat. Add sliced bell peppers and onions, season with salt and pepper, and sauté until they are tender, about 5-7 minutes.

Warm the Pulled Pork

In a separate pot, heat the pulled pork over low heat until warmed through.

Assemble the Tacos

In each soft taco shell, layer the shredded cheese, followed by the sautéed peppers and onions, pulled pork, mild sauce, and coleslaw.

Cook the Home Fries

If using frozen home fries, prepare them according to package instructions. If making homemade, cube potatoes, season, and pan-fry until crispy and golden brown.

Serve

Serve the Bundacos with a side of home fries and a dollop of sour cream.
